zucchini pie.

can you tell it's NOT apple?
todd turned 39!!  
he's an oldy but goody!!
he wanted pie.
so we had chicken pot pie for dinner and 'apple pie' and no bake cheesecake for dessert.
nothing super fancy-- but a fun theme.
todd has often told me the story about his aunt marilyn making 'apple pie' and later confessing that he had actually been eating 'zucchini'.
i thought it would be fun to trick him!

it worked.
all the kids were so excited-- they did figure out something was different, but they continued to eat their pie all up.
afterwards, some thought it was eggplant, some thought is was cucumbers... 
they all thought it was a great joke!
and alas, my large zucchini was eaten happily.

to make a zucchini pie, just cut a large zucchini in half, peel it, scoop out the seeds and slice it into thin, moon/apple shaped slices.  zucchini even LOOKED like apple slices.
i just added about 2/3 c. brown sugar, 2 Tb. flour, a pinch of cinnamon and nutmeg, and added it to the crust.  i think i cooked it for 40 minutes at 350*.  It was really good.  

for todd's birthday he got some new cowboy boots, a new flat screen tv, and a new griddle.
he was thrilled-- as you can see.
i sure love that crazy guy!
this is eve, minutes after her BATH.
yes, babies with HAIR are HARD to keep clean.

Mmm, that looks sneakily delicious! I'm sure glad I've stumbled upon your blog as I'm trying to get this whole home-maker thing down. You're a great inspiration!
